Coming in October, the new vintage of Novello PIWI, between modernity and tradition

Young, ruby-red in color with intense purple hues and a fruity, harmonious aroma, novello is the perfect wine to enjoy with warm autumn flavors.

The Novello is obtained through the process of carbonic maceration: the freshly picked and unstemmed bunches of grapes are tipped into an airtight tank that is saturated with carbon dioxide, where the crushing of the bunches is accomplished naturally thanks to the 'grapes above, this produces the formation of must which, by means of enzymes, initiates the malolactic fermentation phase, generating alcohol and further carbon dioxide. The winemaking method used allows the aromas and smoothness of the resulting wine to be fully enhanced, as it promotes the migration of pigments and other substances from the skin to the pulp.
For us, Novello is a wine that marries well both concepts of modernity and of history and antiquity.

Wine Novello, also known as "autumn wine," is a very historic wine, whose creation is attested in 1930, when a group of scientists by chance discovered a new method of winemaking.This technique, now called carbonic maceration, was, over the years, studied and refined. This process allows for a very fast fermentation, thanks to which the wine produced is light and aromatic.

Novello, more than any other wine, represents winemaking tradition: it is the first wine of the year, drunk after the harvest. It represents and compensates for the hard work of the preceding months, especially accompanied by its trusty companions: roasted chestnuts. Novello and roasted chestnuts is a culinary pairing with a long history: in the past, in fact, there was a custom among farmers in the plains and hills and shepherds in the mountains to exchange these two autumn products with each other.
For us, the Wine Novello is the emblem of the company's philosophy: organic quality, vegan certification, no added sulfites and made from resistant grapes. For this reason, it is also a symbol of modernity for our company.
In fact, this wine was the first wine produced from grapes derived from resistant vines, called PIWI vines, which are the future of oenological and organic viticulture, since they allow us to use fewer treatments precisely because of their resistance to typical vine diseases, such as powdery mildew and downy mildew.

The fact that it is a wine without added sulfites enhances its value, becoming an ode to naturalness and sharing, as it is usable for all consumers.

On October 30, our winery will be tinged with the colors of autumn and will celebrate the release of the wine Novello PIWI without added sulfites vintage 2022.
During the day our Novello will be embellished by the presence of skilled artisans capable of giving new life to classic objects of the past, a true hymn to recycling and creative reuse, an incentive not to throw away the objects of the past but to reuse them reinventing them in a modern key. A celebration dedicated to this historic wine that has become a symbol of innovation for us.
